Pectolytic enzyme preparation for settling.

Characteristics:
Pinnacle Zym Clarify enables quick depectinisation, reduces viscosity and turbidity of must during settling.

Application:

• Pinnacle Zym Clarify is a versatile clarifying enzyme suitable for white/rosé musts.
• Pinnacle Zym Clarify shortens settling step by delivering more compact lees and a clearer must.

Formulation:
Pectolytic concentrate, water, glycerol, stabiliser (ammonium sulphate), preservatives (sodium benzoate, potassium sorbate).

Instructions for use:
Add Pinnacle Zym Clarify as early as possible after pressing.

Pinnacle Zym Clarify can also be added at crushing to maximize press yield and improve clarification.

Dosage:

• From 10 to 12°C (50-54°F): 3-4 mL/hL.
• For temperatures above 12°C (54°F): 2 mL/hL.

Activity:
Activity ≥ 750 PE/g.

Storage conditions:
Store below 10°C (50°F).

Packaging:
1kg bottle, 25kg canister.

Shelf life:
Two years from date of manufacture.
